How to Use Fresh Herbs Beyond Cooking
I started growing herbs because I wanted to cook with them.
That seemed obvious enough.
Basil belonged with tomatoes. Rosemary belonged with potatoes. Mint belonged in iced tea.
Then I started paying closer attention to the plants themselves.
I noticed how completely different mint smelled after I brushed my hand across it. How rosemary left its fragrance on my fingers. How quickly basil filled the air when I tore a few leaves. How lemon balm could look rather ordinary until I touched it and released that beautiful lemony scent.
